These are fun little desserts to make for any occasion. I made delicious little Pinkalicious Mini Pies for Q’s 3rd birthday party that we celebrated at my grandma’s old school cabin….hence the awesome worn chair that’s my favorite. They were super fun to make and SUPER easy and what little girl doesn’t like the book PINKALICIOUS, and what little girl wouldn’t love to eat Pinkalicious Mini Pies for her birthday? Since Q knows almost every word to that book, I thought it would be a fun addition to her party.
Supplies: Muffin tin & 2.5-3″ circle cookie cutter (this can vary)
2-unroll and bake pie crusts
1 cup homemade raspberry jam
1/2 cup powdered sugar
1/2 cup butter
pink sugar sprinkles
Instead of making pie crust, which you could totally do, I bought the “Unroll & Bake” Pie Crists and cut circles two 2.5″-3″ circles out of the dough, one for the top and one for the bottom of each mini pie. Place one of the circles in the bottom of each greased muffin tin until each circle goes up the sides of the muffin tin. Place a small spoonful of homemade jam in the center (away from the edges) of the dough circle. Then place the top circle on the jam and with your fork pointing downward, push the edges of each dough circle together to make a fluted edge on each mini pie.
Brush each mini pie with butter and bake at 400 degrees until the crust is golden brown. After they are baked, make a simple glaze mixture of butter and powdered sugar. Melt 1 cube of butter and add powdered sugar until you arrive and your desired consistency, then add your sugar sprinkles…ok you found me out…can you tell I didn’t measure a darn thing while I was making these! Sometimes you just have to fly by the seat of your pants and know it will work out and turn out lovely.
They were delicious and Pinkalicious….although next time, I will add a little more sugar to the raspberry jam and THEN they may just be perfect.
