sm cheesecake header Mini Cheesecakes…these mini cheesecakes are divine.  I cannot wait to share this recipe with you today.  My mom made these for me as a kid and I love to make them for my family now.

The sour cream topping takes the cake!  These are a perfect treat to take to a family dinner party.   You can double the recipe for more!  You will want to make more!  You can also get creative with the toppings for the mini cheesecakes.  We love fresh raspberries and strawberries in the summer…and canned cherries in the winter.  We’ve even tried drizzling chocolate and caramel over the mini cheesecakes.
sm cheesecake 2 To make the mini cheesecakes, you will need: (Makes 1 Dozen)

Mini Cheesecakes:

2 8 oz. pkgs. cream cheese

3 eggs (separate the yolks and set aside, you will need both)

3/4 cup sugar

1 T. flour

1/4 tsp. baking powder

1 tsp. vanilla

1 box regular Nilla Wafers

Foil Cupcake Liners

Sour Cream Topping:

3/4 cup sour cream

2 T. sugar

1 T. grated rind of a lemon or 1 T. real lemon juice (optional…but it’s good!)

1/2 tsp. vanilla

Topping:

Berries, Canned berries, Chocolate or Caramel…You Choose!

sm cheesecake 6 Preheat your oven to 350 degrees.

Place foil liners in the muffin tin.  Add a Nilla Wafer to the bottom of each liner.

In a small bowl, beat 3 egg whites until stiff.  In a Large bowl, beat together: cream cheese, sugar, 3 egg yolks, and vanilla until light and fluffy.  Mix in flour and baking powder.  Fold egg whites into cream cheese mixture.

In another bowl, mix together sour cream sugar, lemon rind and juice, and vanilla.  Set aside.

Fill each liner 3/4  full with cream cheese mixture.  Bake for 18-20 min (check after 12 min with toothpick).  Remove from oven, and add a spoonful of the sour cream mixture onto the top of each cheesecake.  Return to the oven and bake for another 5-7 minutes.  Allow the cheesecakes to cool.  Add on your fruit, chocolate or caramel toppings.

Banana-Oat-Greek-Yogurt-Muffins

I LOVE banana baked goods. I’m sure you can tell by all the yummy banana recipes that I post. I think I buy bananas just so I can bake with them. Don’t tell my husband. 😉

These yummy Banana Oat Greek Yogurt Muffins are amazing, and if you can believe it, pretty healthy too.  There is no oil or flour so they make for a great snack or even breakfast. But you wouldn’t be able to tell by the taste. I had my girls fighting over these.

Banana-Muffins

I like to throw all my ingredients, minus the chocolate chips, into my Blendtec and hit the batter button. It comes out so nice and smooth, you’d never know that there were oats in there.

Banana Oat and Greek Yogurt Muffins
Ingredients
  • 1 cup plain Greek yogurt
  • 2 medium ripe bananas
  • 2 large eggs
  • 2 cups rolled oats (old fashioned or quick)
  • 1 tsp vanilla
  • ¼ cup brown sugar
  • 1½ tsp baking powder
  • ½ tsp baking soda
  • ½ cup chocolate chips
Instructions
  1. Preheat oven to 400F. Place muffin liners in muffin pan and spray with cooking spray. Remember there isn't any oil so you'll need to spray so they don't stick.
  2. Add all the ingredients, except for the chocolate chips, into a blender or food processor and mix on high until the batter is smooth and creamy.
  3. Pour batter into prepared muffin pan, filling each about ¾ full. Sprinkle a few chocolate chips over the top of each muffin. You can also mix them in prior to this, but I like to sprinkle so I can control how many are in each muffin.
  4. Bake for 15-20 minutes, until the tops of your muffins are set. Allow muffins to cool in pan for about 10 minutes before removing. Store in an air-tight container for up to a week.
I love having these to grab on my way out the door running carpool in the morning. Who couldn’t use a quick grab and go healthy snack or breakfast option?

The Softest Sugar Cookies The Softest Sugar Cookie!

I am excited to share our favorite recipe for SOFT sugar cookies!  I am a huge sugar cookie fan…but only if they are soft. I can’t stand hard cookies…it’s just not right!

This recipe is so easy and your friends and family will love them.  Just add your favorite buttercream frosting.  Any frosting will work.  We’ve made these with strawberry frosting, chocolate frosting, etc.
sm sugar cookies 3 Ingredients for the Softest Sugar Cookies:

1 c. sugar

1/2 c. butter

1/2 c. sour cream (don’t skip this part!)

1 egg

1 tsp. vanilla (or a little more:)

1/2 tsp almond extract (only if you want, adds a little something extra:)

3 cups flour for drop cookies,  3 1/4- 3 1/2  (for roll out cookies) flour

1/2 tsp. salt

1 tsp. baking soda sm sugar cookies 1 To make the Softest Sugar Cookies:

Cream together sugar, egg, softened butter, vanilla, and sour cream.  In a separate bowl, combine dry ingredients.  Slowly add this to your sour cream mixture.  Mix well.  For best results, refrigerate for 1-2 hours.  You can either roll out the dough and use your favorite cookie cutters, or you can drop and flatten balls evenly on your cookie sheet.

Bake at 375 degrees for 6-7 minutes.  Don’t over bake.

Hello there!  It’s Katie from The Casual Craftlete blog.  Breakfast is one of the most important meals of the day, so you should try to make recipes that you enjoy, right?  And maybe they should be a bit healthy too or at least I like to eat a bit better earlier in the mornings.  Today, I am sharing a super yummy Chocolate Peanut Butter Smoothie recipe that not only tastes great but is good for you to.  My favorite flavor combination has to be chocolate and peanut butter and this smoothie recipe does not disappoint!

I love a good smoothie recipe and this one is definitely one to try.  Smoothies are a great breakfast or snack option because they are easy to make and can be portable for those busy mornings on the go.  Just throw all the smoothie ingredients into a blender, zip it up, and your done.  It seriously takes 5 minutes to make this awesome smoothie.

This easy Chocolate Peanut Butter Smoothie recipe is made with just 5 simple ingredients that you probably already have at home.  If you love thick rich smoothies, than this is the recipe for you.  It’s so thick, it’s almost like a milkshake…yum!  But, not to worry if you don’t like thick smoothies.  You can always thin it out with extra liquid.  Of course, I like to add mini chocolate chips to the top of this smoothie.  This step is optional but totally recommended.  You can never go wrong with mini milk chocolate chips.

  1. Add all ingredients into a large blender and process until smooth and creamy. Top with mini chocolate chips if desired.

Chocolate Chip Banana Pancakes

My husband and I went on an anniversary vacation to Kauai last year. It was amazing. One thing that I tried and fell in love with was the Chocolate Chip Banana Pancakes. Everywhere we ate for breakfast I had to try the fun pancakes, but these by far were my favorite flavor combination. And don’t get me started on the Coconut Syrup. HEAVEN! Let’s just say I wasn’t counting calories. 😉

I wanted to recreate this taste of heaven for my girls when we got home. So I found this old family favorite pancake recipe and added in the bananas and chocolate chips. I didn’t even use syrup on these because they were so yummy.

Chocolate Chip Banana Pancakes
Ingredients
  • 1 cup flour
  • 1 tablespoon sugar
  • 2 teaspoons baking powder
  • ¼ teaspoon salt
  • 1 egg
  • 1 cup milk
  • 2 tablespoons vegetable oil
  • 2 bananas, mashed
  • ¼-1/2 cup chocolate chips (add in to your preference)
Instructions
  1. In a medium mixing bowl stir together the flour, sugar, baking powder, and salt. Make a well in the dry mixture and set aside.
  2. In another bowl mix the wet ingredients; egg, milk and oil. Add this mixture all at once to the dry mixture. Stir until just moistened. Batter may be lumpy and that's just fine. Add in your mashed bananas and stir. Add in the chocolate chips and mix well.
  3. Pour onto a heated griddle. I heat my griddle to about 325.
  4. Top with your favorite syrup, fruit or whipped cream.

How to Make Butter

Have you ever made your own butter? Do you know how easy it is to make butter? So supper easy, you’re gonna want to make it anytime you make a batch of homemade bread or rolls. All you need is some whipping cream and a trusty mixer. You can use fresh cream if you have that available.

Pour your cream into your mixer. I used about a quart (4 cups) of cream. Use you’re paddle attachment for this.

After a few minutes your whipping cream will turn to whipping cream. 🙂 This is the point that you will want to cover the mixer either with the shield or a towel. Trust me on this one. Once the liquid starts to separate and you get the butter, it will splash everywhere. (Don’t ask me how I know this.)

Once you start to hear some sloshing in the mixer you can stop and see if you are at this point. This is where you want to be. Here you have the butter, and buttermilk.  You can save the buttermilk for use for later. But for now you want that butter.

You need to wash all the buttermilk out and get the butter ready for consumption. It will have more of a rubbery feel at first. Start kneading it under some water to get the buttermilk out and to get the butter all smooth and butter.

I put the towel in the bottom of the sink so you could see the creamy white liquid that escapes the butter.

Add in some salt to taste.

So, now that the introductions are out of the way – is anyone else sort of stunned that it is already March? And Easter is right around the corner? Well, if your life has been on fast forward like mine, then you will love this super easy Easter treat!

I mean … look at those sweet little faces?! Chocolate covered strawberries have never been cuter!

Bunny Face Strawberries

Bunny Face Strawberries are the cutest no bake Easter treat ever!

With a few supplies from your kitchen, you can make a whole herd of these Bunny Face Strawberries in no time! And just in case you are wondering, Google confirmed that a group of rabbits is called a herd 🙂

Anyway, here is what you need:

  • Ripe strawberries
  • Vanilla Candiquik or white candy melts
  • Flat candy sprinkles – blue and black for eyes
  • Chocolate jimmies – these are the whiskers
  • Mini pink Sixlets – or any other small pink candy for a nose
  • A large baking sheet lined with parchment paper
  • Food tweezers (optional but a set makes placing the sprinkles easier)

I like to set up a dipping station right on my baking sheet so everything is close at hand. It also helps keep drips on the parchment paper and makes clean up a breeze!

Set up a dipping station to make dipping strawberries (and clean up) easy while making Bunny Face Strawberries!

Once you have your dipping station ready and you have melted your Candiquik or candy melts according to package directions, get ready to dip!
Step by step instructions for making Bunny Face Strawberries from Shaken Together at The Crafting Chicks!

  1. Dip the strawberry in the melted Candiquik, allow some of the excess to drip off and move it to your parchment lined baking sheet.
  2. Allow the Candiquik to set just a bit and add the pink candy nose. You may need to hold it in place for a few seconds so it doesn’t slip down the strawberry.
  3. Add two flat sprinkles for eyes. I used both black and blue sprinkles.
  4. Use the tweezers to place three chocolate jimmies on either side of the nose to create whiskers.
  5. Allow the Bunny Face Strawberries to set. You can speed this up by popping them in the fridge.

These are best served within a day and can be stored in the fridge until you are ready to serve these sweet little berry bunnies. If you ask me, these Bunny Face Strawberries are almost too cute to eat.

Bunny Face Cookies - A fun Easter acitivty!  My kids will love these! My kids and I made these bunny face cookies…we love them!  They slightly look like rats…or cats, but we still love them.  You just need a few ingredients to make these Bunny Face Cookies.  Serve them at an Easter/Spring party or deliver them to some friends or neighbors.  We got a kick out of how they turned out…from their whiskers, to their ears.  And don’t forget the silly edible eyeballs. bunny cookies What you need to make the Bunny Face Cookies:

-Cookies (any kind with frosting) We made our soft homemade sugar cookies that we love (I can’t wait to share that recipe soon!)

-Frosting

-Mini Jelly Beans for the Nose and Cheeks

-Easter Candy Corn (I love the pastel colors)

-Candy Eyeballs

-Licorice (we found these little licorice strips called “Rips” in the candy section) for the whiskers.  Or you could use coconut.

-White sprinkles for two teeth
