Marshmallow Fairy Wands

Ingredients
  • Nonstick cooking spray
  • 3 (1/4 ounce) packages unflavored gelatin
  • ½ cup + ¼ cup cold water, divided
  • 2 cups granulated sugar
  • ⅔ cup light corn syrup
  • ¼ teaspoon salt
  • 1 teaspoon vanilla extract
  • Confectioner's sugar, sifted, for coating

Instructions
  1. Lightly spray a 9 x 9 inch baking dish with nonstick cooking spray. Line prepared dish with plastic wrap, leaving a 2 inch overhang on all sides and set aside.
  2. In a mixing bowl of a stand mixer fitted with the whisk attachment, sprinkle gelatin over cold water and let stand for 10 minutes. In the meantime, combine granulated sugar, corn syrup, and ¼ cup water in a medium sauce pan over medium-high heat. Bring mixture to a rolling boil and boil for 1 minute. Remove from heat. Turn the mixer on high and slowly pour the syrup mixture into the mixing bowl with the gelatin mixture. Add salt and continue mixing on high for 12 minutes.
  3. Add vanilla extract and mix until well combined. Spray a rubber spatula with nonstick cooking spray. Remove the marshmallow mixture with the prepared spatula into the dish and spread evenly. Coat the top of the marshmallow mixture with sprinkles and gently press the sprinkles into the mixture. Let stand for 2 hours.
  4. After the marshmallow mixture has set, coat a working surface with confectioner's sugar. Carefully remove the marshmallow mixture onto prepared work space, sprinkled side up. Cut marshmallow into stars using a cooking cutter coated with cooking spray. Insert a paper straw into each star.
