Banana Bread Granola

Ingredients
  • 5 cups old fashion rolled oats
  • 2 cups walnuts, chopped
  • 2 Tablespoons flax seed
  • ½ cup unsweetened coconut flakes
  • 2 teaspoons ground cinnamon
  • ½ teaspoon salt
  • 4 teaspoons vanilla extract
  • ⅓ cup pure maple syrup
  • ½ mashed banana (approximately 1 banana)
  • ½ cup coconut oil, melted and cooled
  • 2 cups dried bananas
Instructions
  1. Preheat oven to 325 F. Line a large baking sheet with parchment paper and set aside.
  2. In a large mixing bowl, combine rolled oats and walnuts.
  3. In a separate medium mixing bowl, combine all the remaining ingredients except the dried bananas.
  4. Pour the liquid mixture over the oats and nuts and stir until well combined.
  5. Pour the mixture onto prepared baking sheet, using a spatula to pressed down on the granola.
  6. Bake at 325 F for approximately 30 to 40 minutes, or until the granola is golden brown.
  7. Remove granola from the oven and place on a wire cool rack and let cool completely.
  8. Once cooled, break the granola into chunks and add the dried bananas.
  9. Store in an airtight container for up to one week.
