- 5 cups old fashion rolled oats
- 2 cups walnuts, chopped
- 2 Tablespoons flax seed
- ½ cup unsweetened coconut flakes
- 2 teaspoons ground cinnamon
- ½ teaspoon salt
- 4 teaspoons vanilla extract
- ⅓ cup pure maple syrup
- ½ mashed banana (approximately 1 banana)
- ½ cup coconut oil, melted and cooled
- 2 cups dried bananas
- Preheat oven to 325 F. Line a large baking sheet with parchment paper and set aside.
- In a large mixing bowl, combine rolled oats and walnuts.
- In a separate medium mixing bowl, combine all the remaining ingredients except the dried bananas.
- Pour the liquid mixture over the oats and nuts and stir until well combined.
- Pour the mixture onto prepared baking sheet, using a spatula to pressed down on the granola.
- Bake at 325 F for approximately 30 to 40 minutes, or until the granola is golden brown.
- Remove granola from the oven and place on a wire cool rack and let cool completely.
- Once cooled, break the granola into chunks and add the dried bananas.
- Store in an airtight container for up to one week.
