I’d bet you are familiar with takeout containers of Ham Fried Rice, and while that stuff is pretty good, this is 500% better. Maybe I just feel this way cause we didn’t eat a lot of Chinese takeout growing up, but this has been one of my favorite meals for many many years!
My mom would make it occasionally, usually as a birthday dinner request or on New Year’s Day. I’m not really sure why New Year’s Day = Chinese, since we all know that isn’t the same as Chinese New Year’s, but it’s a tradition I’m willing to carry on. You know, so I can have an excuse to eat Ham Fried Rice and Sweet and Sour Chicken.
This is recipe is the very first in the recipe book I started when I left home and started cooking for myself.
- 2 Tbs. butter
- 2 eggs
- 2 Tbs. green onion, chopped
- 1 tps. sugar
- dash pepper
- 4 c. rice (cooked)
- 1½ Tbs. soy sauce
- ½-1 cup ham, chopped
- Melt butter in a large pan. Scramble eggs in melted butter. Add green onion, sugar, and pepper to eggs. Add rice, soy sauce, and ham to eggs. Steam for 15 minutes.
