Summer Fun Chart!

I'm excited to share my SUMMER FUN CHART again this year.  This is the 4th year i've been doing this with my kids and it's really a tool my me AND the kids.  I love that it reminds us of the things we might want to do this summer and it also gives us so many options so nobody can EVER say that they are board.  I start the list in early Spring and anytime I think of a new idea, I add it to my Summer Google Doc and eventually I have a full list.  I also look at the list from last year and pull in a bunch of things we want to try again. Hey! Who's excited for summer!? We're mentally gearing up for the change of pace that summer break brings to our homes. And we're sure you're probably doing the same. So we're sharing our favorites summer things that help make our summers enjoyable. Between the 5 of us there are 17 kids! So these are tried and true :)  Sports-Brella XL This is a huge umbrella that blocks wind rain and the sun. It is a must have for soccer games, camping, and the lake!  L'Oreal Paris Sublime Glow Daily Body Moisturizer and Natural Skin Tone Enhancer Thank heavens for this!  I love being able to look like I have some summer color without tanning! Banana Boat Ultramist Baby Tear Free Lotion SPF 50  I have 4 fair skinned kiddos and this sunscreen spray is heaven sent. I love how quick and easy it is to apply! Time saver! Lemon Tarragon Pasta Salad with Chicken

  This is the tastiest recipe!!  I can't claim it though.  I was at a luncheon this last Saturday and this was on the menu and I had to find the recipe.  I finally tracked it down and had to make it on Sunday and the origon of this recipe is unknown.  I had never purchased shallots or tarragon but it was a new experience and I will be making this again.  I modified it a little bit, added more tarragon, more lemon and took our an ingredient and here it is: Salad: 3 cups uncooked bow tie pasta (cook as directed) 2 cups cubed cooked chicken breasts 1 cup chopped celery 2/3 cup chopped green onions Dressing: 1 cup Mayo zest, juice and pulp from 1.5 lemons 1 T. minced shallot 1-2 T+ fresh tarragon leaves chopped dash of salt 1/2 to 1 tsp sugar Mix all together.  Pour over salad and let marinate 30 min to 2 hours. Jell-O Popsicles

I'm excited to share the recipe for our new favorite summer treat.  Jello-O Popsicles! I got this recipe from my cute friend Emily. We were over one day and my girls gobbled these up.  The Jell-O makes it so the popsicles don't melt as quickly. Here's what you'll need!Jell-O Popsicles 1 small box Jell-O (any flavor)1 cup boiling water1 cup sugar1 package unsweetened Kool-Aid (can be the same flavor as your Jell-O or mix it up)4 cups cold water Dissolve Jell-O in 1 cup boiling water. Add 1 cup sugar and 1 package Kool-Aid and stir to dissolve sugar.  Add 4 cups cold water.  Pour into small paper or plastic cups and put in the freezer.  When they are partially frozen insert the popsicle sticks.  Contiune until frozen. Just pull the cups out of the freezer and you can run the cups under a little bit of water so you can slide the popsicle out easily. {Yummy Summer Fruit Dip}

This is the yummiest fruit dip ever!!!:)  I'm sure a lot of you have already seen this recipe, but for all of you who haven't, I just have to share.  I wouldn't want any of you lovely readers to be deprived of this heavenly goodness!!! You will need:              1 8oz. cube of cream cheese                                                                     1 7oz. container of marshmallow cream                              1 1/2 cups Cool Whip Fruit Soften the cream cheese really well in a medium sized bowl, add marshmallow cream and mix together.  Finally add the Cool Whip.  You can add more of the Cool Whip if  you like, I like just enough to make it nice and fluffy. :)  As for the fruit, I have a completely unhealthy obsession with strawberries (I seriously could live on them), so that is usually the only fruit I use.  Some other fruits that are great with this fabulous dip are bananas and pineapples.
