- ¼ c brown sugar
- 2 Tbs corn starch
- ½ tps salt
- ¼ c. vinegar
- 1 TBS soy sauce
- ¼ cup green onion, chopped
- ½ c chopped celery
- 1 can pineapple chunks (drained, save the juice)
- ¾ c. green pepper chopped
- 3 chicken breasts chunked
- Brown chicken pieces in a skillet or wok.
- While chicken is browning: Whisk together brown sugar, corn starch, salt, vinegar, soy sauce and juice from pineapple. Set aside
- Add green onion, celery, green pepper to chicken. Cook until tender. Add the sauce and pineapple. Cook until thickened. Serve over rice.
