S'mores Cupcake Recipe

  • 1¼ c. graham cracker crumbs
  • ¼ c. sugar
  • ⅓ c. melted butter
  • 1 Devils Food cake mix
  • 1 pkg. instant chocolate pudding
  • 4 eggs
  • 1 c. oil
  • 1 c. sour cream
  • ½ c. warm water
  • marshmallow cream
  1. Mix together graham cracker crumbs, sugar and melted butter. Divide between cupcakes and press into cupcake lines. Back at 375 for 6 minutes.
  2. While those are in the oven, mix together cake mix, pudding mix, eggs, oil, sour cream and water. After the graham cracker crust comes out of the oven, use a cookie scoop to scoop cake batter on top of the graham cracker crust. Bake at 350 for 15-20 minutes.
  3. Once cupcakes have cooled completely, fill a pastry bag with marshmallow cream fitted with a round tip. Insert tip into the cupcake and squeeze to create a marshmallow filled cupcake. If you don't have a pastry bag you can cut out a small circle in the top of the cupcake and fill the hole with marshmallow cream.
  4. Top with your favorite chocolate buttercream frosting.
