Happy 4th of July! We’re already worn out from all the celebrating (our town did fireworks on Friday) and the real celebration is just beginning!
Here’s a yummy treat that’s perfect for your summer BBQ’s. Frozen Strawberry Chocolate Cheesecake Cupcakes, a gourmet cupcake made in your own kitchen! The name’s a mouthful, but don’t let that scare– you they are so simple to make. In fact, you may already have everything you need to whip these up before the fireworks tonight!
The key ingredients are of course, chocolate cupcakes, and Nutella, strawberry jam, and cream cheese frosting.
Bake the cupcakes (from scratch or a box mix, whichever you prefer) and let cool.
Then frost with a thin layer of Nutella.
Top with a spoonful of strawberry jam. I used freezer jam, but you could use regular jam. Raspberry jam is delicious too. Just call them Frozen Rasbperry Chocolate Cheesecake Cupcakes instead.Put the cupcakes in the freezer until the jam is solid. This takes about 30-45 minutes.
When the jam is frozen, you add the cream cheese frosting, and put back in the freezer until the frosting has frozen. I prefer it just frozen, so maybe an hour or 2. But you can let them freeze overnight or until you are ready to serve. At this point there is no way you can go wrong—not frozen, slightly frozen, or frozen solid it doesn’t matter they will be delicious!
There’s just something about frozen treats in the summer. And those layers of frozen goodness–crunching through the hard Nutella and jam layers and the creamy frozen frosting–YUM!!

Wow!!! Nothing can go wrong with frozen frosting during summer time. Combined with the softness of the cupcake, the taste must be magnificent 😀
