Chewy Granola Bars
Is my house the only one that it’s impossible to keep snacks in during the summer? It seems the kids are bottomless pits, and then there’s the trips to the pool, picnics, and friends that all require more snacks. This is a family favorite recipe that you can customize to fit your families taste. It’s a simple recipe and chances are you already have everything you need! And the best part is they taste way better than store bought granola bars!
Chewy Granola Bars
3 c. rolled oats
1 c. flour
1 tsp. baking soda
1/2 tsp. salt
1 tsp. vanilla
1/2 c. melted butter
1/2 c. brown sugar
1/2 c. honey
1/4 c. oil
Combine ingredients until mixed, then add:
1 c. chopped nuts
1/2 c. raisins
1 c. chocolate chips
Side note: I’ve never actually used this combination, I always substitute and mix and match ingredients. This recipe is very forgiving so let your creativity take charge!
Press into a 9×13 greased pan.
Bake at 325* for 20 minutes. Let cool completely before cutting. If you don’t they’ll fall apart–you’ve been warned.
Some of our favorite add-ins are
Cinnamon Raisin—walnuts, raisins, and cinnamon chips
Cranberry Walnut–walnuts, craisins, and white chocolate chips
Peanut Butter Chocolate Chip-leave out the nuts and raisins, and add 1/2 c. peanut butter and mini chocolate chips
Already made a batch this morning (immediately after seeing this post!) and they are so yummy. I let them cool completely and they still crumbled on me though. My kids didn’t mind at all and were happy to eat with a bowl and spoon. Will definitely try another batch soon and see if I can figure out how to keep them in bar-form.
I can’t wait to try these! I love chocolate chip granola bars, and have been meaning to try making my own. This will inspire me. 🙂
Have you ever tried freezing them? Looks like the recipe makes a lot of bars, so I’m wondering if freezing may be an option…

made these with a cup of mini chocolate chips and a cup of shredded coconut. they are so chewy they won’t hold together. this is a common problem for all the granola bar recipes i try. what am i doing wrong? it makes me want to add an egg to the mix so they might stay together. would that work or are there other suggestions?
They look delicious and easy to make. I wonder about how many calories are in the picture on the bars and how long they will keep. Do you think they will stay together better if they are refrigerated overnight? I generally eat in the car during the school year. Thanks!
I made these this weekend and they are such a hit! I wrapped them individually in foil and put in a container in the fridge. Lasted 2 days. LOL. They are fabulous. Thanks for sharing!
