Gingerbread Biscuit Bites – A Holiday Breakfast Recipe!

Happy Holidays, everyone! I’m Keri and I am the blogger behind Shaken Together where I love to share no-fuss food and easy entertaining ideas!

Since breakfast is the most important meal of the day, I thought that I would share a sweet little breakfast treat that is simple and delicious … Gingerbread Biscuit Bites! These little gingerbread guys and gals start with refrigerated biscuits, so if you’ve got a couple of cookie cutters, this holiday breakfast recipe will be done in no time!

First, flatten your biscuits and use mini gingerbread cookie cutters to cut shapes from the biscuit dough. I was able to get 16 gingerbread bites from an 8-count can of biscuits.

Gingerbread Biscuit Bites are SO easy to make for breakfast - they start with refrigerated biscuits and mini cookie cutters!

Quick tip:  Cut up and bake the biscuit scraps to top a salad or dip into a bowl of soup!

Bake the biscuits according to package directions. They should come out lightly browned, soft and fluffy!

While they are still warm (but not too hot to touch), brush the biscuit bites with melted butter and dip them in gingerbread sugar!

What is gingerbread sugar? Instead of just cinnamon sugar, I mixed ground ginger, ground cloves, nutmeg, cinnamon and allspice with granulated sugar … now they really taste like gingerbread!

These Gingerbread Biscuit Bites are similar to baked sugar dipped donut holes and they are definitely made for dipping!

We love to dunk these cuties in Nutella or raspberry jam … everything is more fun when you can dip it!

These are best enjoyed warm out of the oven … which is not a problem since they go quickly!

Gingerbread Biscuit Bites - A Holiday Breakfast Recipe!

Ingredients
  • One 8-count can of large, flaky layer biscuits
  • ½ stick of unsalted butter, melted
  • Gingerbread sugar (1/2 cup granulated sugar + 1 tablespoon cinnamon + ½ teaspoon each: ground ginger, ground cloves, ground nutmeg, allspice)
Instructions
  1. Preheat oven to 350 degrees F (or whatever temperature is called for on your package).
  2. Prepare a large baking sheet with non-stick cooking spray.
  3. Flatten each biscuit and use mini gingerbread cookies to cut two gingerbread shapes from each biscuit round.
  4. Place biscuit bites on baking sheet and bake according to package directions.
  5. While the biscuits are still warm, brush them with melted butter and dip in gingerbread sugar.
  6. Enjoy plain or dipped in Nutella or jam!

These are easy enough that you can make them with the kids on Christmas morning or for a snow day breakfast!
