Mini No Bake Wedding Cakes
Friends, I am SO excited to be back with you. And if you know anything about me, it’s probably no surprise that I brought cake 😉 Not just any cake … Mini No Bake Wedding Cakes! Teeny tiny tiered cakes that are absolutely perfect for bridal showers, a rehearsal dinner, anniversary party or even wedding favors.
In case we haven’t met, I am Keri from Shaken Together. I am an operations manager, working mom to two teenage boys and wife of 17 years. I love to share no-fuss food and easy entertaining ideas, so if you like recipes with regular ingredients and no complicated techniques, then I am the girl for you!
Now, since wedding season is quickly approaching, I wanted to share a sweet little tiered no bake treat for any wedding celebration …
Mini No Bake Wedding Cakes
Here is a list of ingredients to make these mini cakes:
- Frozen pound cake
- One tub of purchased white/vanilla/cream cheese frosting
- 3 round cookie cutters in varying sizes – mine were 2 1/4, 1 3/4 and 1 1/4 inch rounds and they are from an inexpensive set from a big box store
- White nonpareils (sprinkles) and sparkling sugar
Gather the following kitchen items as well:
- Baking sheet with sides
- A cooling rack that fits inside the baking sheet
- Sharp knife
- Spoon
These cakes start with frozen pound cake. Using a large sharp knife, cut the frozen pound cake in about 1 inch slices lengthwise. Since pound cake is a little denser than regular cake, it holds its shape well and can easily be cut with a cookie cutter. Which is handy, since that is exactly how these cuties start.
One small frozen pound cake results in about four 3-tier mini wedding cakes. (This may vary depending on the size of the cookie cutters you use.)
P.S.A. – Save your pound cake scraps for mini trifles, top them with fruit or just to nibble while you work 🙂
Once your pound cake rounds are cut, use some frosting to act as ‘glue’ to hold the tiers together. This also helps even out the layers if they are a teeny bit uneven. You could also use jam or even Nutella between the layers – YUM!
Place a cooling rack in a baking sheet and place the mini cakes on top of the cooling rack. Then, microwave the remaining frosting at 20 second intervals until it is a pourable consistency. Spoon the frosting over the stacked mini cakes like this:
Make sure you continue to spoon frosting around the sides and over the layers to ensure that the entire mini cake is covered.
Allow the frosting to drip off and set up slightly. Then, sprinkle the No Bake Mini Wedding Cakes with white sprinkles and sparkling sugar.
These are just so pretty and decked out in their wedding finery. You could easily personalize these with sprinkles/sugar in the wedding colors or even edible flowers. Wouldn’t that be gorgeous?!
Whether you are hosting a bridal shower, helping with a rehearsal dinner or DIYing your own wedding, these Mini No Bake Wedding Cakes are the perfect easy dessert!
Do you have any great wedding stories? Fun bridal traditions in your family? Did you have a traditional or totally untraditional wedding? When my hubby and I had been married for ten years, we renewed our vows – our boys walked me down the aisle in Converse, I wore flowered shoes and we made all of the food ourselves. 🙂
Keri – do these cakes have to be refrigerated if they are not being used until the next evening? In a cooler, would these travel well? How long does it take to make a couple of these since I would be looking at doing 40 of them for the next evening?
thanks
Hi Diane,
I think that I would refrigerate them especially if you are traveling with them. I’ll see if I can get an answer from Keri. Thanks!
Did you receive a reply? I was wondering the same thing.
I’ll ask Keri but I think refrigeration would be a great idea if you are making them a head of time.
How many does recipe make? If I need to make about 40 or so, what would I need to do?
Tried this and was not able to achieve anything close to the picture above! A lot of cake showing through, uneven coverage, if we tried to put a thick layer on the cakes looked gloppy. Two of us working together to try and cover a dozen of these and the results were pretty sad. You can go to my pinterest page to see what these looked like in reality. Taste was great though!
I’m sorry Susie. Glad they tasted good.
wow nice idea.We could make it for party’s
So, I fell in love with how cute these are! So easy to assemble, it takes less than 5 minutes to build and decorate each cake. I am not a professional baker, just a home cook. Truthfully, the hardest part is cutting the cake layers so that they are uniform in thickness. I used a ruler. My version was just as adorable as original photo! I plan on making 30 of these as dessert for my future daughter in law wedding rehearsal dinner. Thank you for posting this idea!
Would it work with angel food cake instead of pound cake?
Pound cake is denser and make hold better trying to cut them in uniform pieces. I suppose
if the pound cake is frozen it would work, but you know how that is trying to make things work from different things, it doesn’t always work.
Oh my goodness. These are ADORABLE, and ‘no bake’ is my kind of baking. 🙂 These are going to be perfect for a bridal shower I’m hosting in two weeks. Thanks for the fun idea!
I want to make these for a bridal shower 7 days from now. I was wondering if I baked a pound cake in a jelly roll pan, the cut it and froze the circles, could I assemble them two days before the event and still have them taste fresh?
What frosting did you use? That recipe would be helpf
It’s just a store bought vanilla frosting.
What do you use to transfer cakes from cooling rack to plate?
I need to make 40. How many pound cakes would i need to use. I would need yellow frosting. Can anyone help me with this. It’s for my daughters bridal shower
Cathy, One pound cake will result in about 3 mini tiered cakes. So you would need about 14 frozen pound cakes.
Can I use buttercream icing
You can, but you’ll want to follow the steps to make sure to warm it and have it run over the cakes.
Cathy I love these min. Cakes. Want to make them for my grandsons and future granddaughter rehearsal dinner. Did you have them on a minuture cake board?
Beautiful idea. Did you place the minney cakes on a small cake board?
We didn’t but you could. That would be super fun.
I made these for a baby shower and they turned out so cute for my first attempt. I even used the scraps to make cake balls!
Thanks for this super cute and unique idea. I wish I could attach a picture because I really was proud of how they turned out.
Note: in reading one of the comments they said that they were difficult to cover with the icing. I tested the consistency on one first, and I have to say do not be afraid to let the icing get almost soupy. It pours so much better. My first one was definitely not pretty but still tasty.
I am taking the extra cake that is left over and make balls out of it. Dipping them and making them a grooms dessert at the wedding shower next to the small bridal cakes. Actually I have a three tier stand I made that has a dish on the top that I am placing them in so I believe it will all blend and work out great. Just an idea for others to do with their extra cake.
