Oatmeal Coconut Chocolate Chip Cookies

Oatmeal Coconut Chocolate Chip Cookies
This is my go-to chocolate chip cookie recipe for adults! It has all of the good stuff, some kids don’t mind the oatmeal and coconut (nuts are optional and I rarely add them) but very few adults will turn their nose up to these.
To make them even more impressive I like to scoop them with a 3 Tbsp cookie scoop, so these are big cookies! Typically, I use a 1 Tbsp scoop for my every day chocolate chip cookies but these call for something greater.
The edges are crunchy and the centers are soft and chewy-just like I like them!
- 1½ c. sugar
- 1½ c. brown sugar
- 1½ c. butter
- 3 eggs
- 1 1 /2 tsp. vanilla
- 3 c. oats
- 3 c. coconut
- 1½ c. nuts (optional)
- 3¾ c. flour
- 3 tsp. baking powder
- 3 tsp. baking soda
- 1½ tsp. salt
- chocolate chips
- Cream butter, sugars and eggs. Add oats, coconut, nuts, flour, baking powder, baking soda, and salt. Mix. Stir in chocolate chips.Bake at 350 for 12-15 minutes until edges are starting to brown.
The larger cookies fit great in a CD sleeve and these are the cookies we used for our Cookie Party Invitations.
This recipe makes a large batch, but is easily divided into 1/3rds. Unless I’m making them for a big group I usually 2/3rds it. Get your kids involved in figuring out the fractions – it’s good practice!
These are our new favourite cookies! Perfectly chewy and even my non-coconut lovers like these cookies.
