Spinach Tortellini Salad

I LOVE this yummy Spinach Tortellini Salad, especially in the summer and just had to share it with you!

 

I received this salad recipe at an exchange a few years ago and since then, I have made it many times-in fact I crave it often-especially when it is warm outside and I feel like eating a cool dish! It is the perfect salad for a luncheon, or even dinner. And the dressing is tasty, tasty, tasty! The tortellini makes it even more filling and delicious!

Spinach Tortellini Salad Ingredients:

Fresh Baby Spinach (I use one package of spinach but have doubled this for a party or luncheon)

Canned Mandarin Oranges

Cheese tortellini, cooked & chilled (I like the refrigerated tortellini best)

Bacon, cooked, cooled & broken into pieces (About 5 slices and I like it extra crispy!)

{Toss these ingredients together in a bowl}

Dressing Instructions:

1/2 c. sugar

1/4 c. red wine vinegar

Combine sugar and vinegar in a pan on the stove. Bring to a boil. Stir to blend in the sugar and once it comes to a boil, turn off the heat and add the remaining ingredients:

1/4 c. extra virgin olive oil (or canola oil)

1/4 tsp. Paprika

1 T. grated onion

1/2 tsp. salt

1 T. toasted sesame seeds (just lightly brown the sesame seeds in a frying pan)

Before pouring the dressing on the salad, stir it really well. ENJOY!

Instructions
  1. Toss together baby spinach, mandarin oranges, cheese tortellini, bacon.
  2. Combine sugar and red wine vinegar in a pan on the stove. Stir to mix in the sugar and once it comes to a boil turn off the heat and add the remaining ingredients.
  3. Pour dressing over the mixed salad.

  5. I love baby leggings! My babies are no longer crawling, but my 2 1/2 year old wears them at night with night gowns and my 7 year old wears them as arm warmers! You have some very cute models!!

    I love the baby legs. I have a 2 1/2 month old who I am pretty sure is going to be an early crawler as he already is scooting across the bed. I have all hard floors so these are going to be a lifesaver for his poor little legs!

  21. oh man, i wish i had known about baby legs! my 9 month old has been crawling for months and has rug burn to show it! those are so stinkin’ cute! he could use them, and so could his baby brother or sister when he/she arrives!

  24. Made this right after you posted it…and waited to comment to escape the baby leg frenzy of posts. Maybe I should say, I made it for dinner one night, and breakfast the next morning, oh and then lunch. You get the idea! The dressing is a great blend of flavors and the Torts really add to it.
