Loving this Dr. Seuss Popcorn for our Summer Series Dr. Seuss week! Thanks Alli for sharing! You can find more of her fabulous recipes at Cupcake Diaries!

Make up a batch of this popcorn and grab a Dr. Seuss book for a fun, snack-filled story time! This popcorn is perfect for a Dr. Seuss themed party or an afternoon treat.

Dr. Seuss Popcorn

I’m so excited to be here participating in the Crafting Chicks’ “Mother Hen Summer Survival Guide” series! I’m Alli from Cupcake Diaries and as a mom of three young boys, I could use all the help I can get in the entertainment department. This series has so much to offer already and I can’t wait to see what’s to come!

When my son turned one I threw him a Dr. Seuss birthday party and invited all his cousins, aunts and uncles, and grandparents. It was so fun making treats and having different games and activities based on the bright colors and books of Dr. Seuss.

I was so happy when I got to make a Dr. Seuss recipe for this series and come up with something that would have easily worked with that fun party. This popcorn is the perfect treat to not only serve at a party, but to make on a summer afternoon and watch The Cat in the Hat or read one of Dr. Seuss’ many books.

Dr. Seuss Popcorn

This recipe makes a cookie sheet full of popcorn. When all was said and done, it filled a gallon size ziploc bag. Perfect for keeping in the pantry for the kids to easily get a snack.

Dr. Seuss Popcorn

  • 10 cups popped popcorn
  • 1 c. sugar
  • 1/3 c. light corn syrup
  • 1/2 c. butter
  • 1 (4oz) box cherry jello
  • bright blue cups

Preheat oven to 200° F. Line a standard cookie sheet with wax paper and spray with cooking spray; set aside. Place popped popcorn in a large bowl and set aside.

In a saucepan, melt butter over medium heat and add sugar and corn syrup. Mix together and add jello.

Continue to stir and bring the mixture to a boil. Allow it to boil for 5 minutes. Pour the mixture over the popcorn and stir around to coat. Spread popcorn out onto prepared cookie sheet and bake for 15 minutes. Remove from the oven, stir, and place back in the oven for 15 minutes. Stir again and bake for another 15 minutes, totaling 45 minutes of baking. Allow the popcorn to cool completely before serving. Place in blue cups and enjoy!
