Lemon and Chive New Potatoes
Some days I get so tired of cooking the same thing for dinner. That is if I can think of anything. I’ve decided that I want to add in a few other things, and side dishes are a great way to change dinner up. Especially if you are making these Lemon and Chive New Potatoes. This easy recipe packs in lots of flavor and pairs well with grilled chicken or fish. In fact, I’ve loved serving it with this Crispy Baked Salmon recipe that I shared yesterday.
This are even great for the pickiest eaters. My girls love the flavor and have even helped me make these. If you have new potatoes you can whip these up in no time at all.

Ingredients
- 10 to 12 whole tiny new potatoes
- 2 tablespoons butter
- 1 tablespoon snipped fresh chives or green onion tops
- 1 tablespoon lemon juice
- ⅛ to ¼ teaspoon pepper
- ⅛ teaspoon salt
Instructions
- Scrub potatoes throughly. Cut potatoes in halves or quarters.
- In a large saucepan cook potatoes in a small amount of lightly salted, boiling water for 15-20 minutes, or until tender. Drain any left over water.
- Add butter, chives, lemon juice, pepper, and salt to the potatoes and gently toss to coat.
Seriously so easy and they are great as leftovers too.
