Mexican Casserole
Looking for a fun way to spice up dinner time? Try this Mexican Casserole that is sure to be a crowd pleaser in your home.
My mother-in-law was an amazing cook. She had a treasure trove of recipes that I went through after she died and complied a list of family favorites. This Mexican Casserole is one that did not look appealing to me at all. But it is one of our family favorites.
Spicy and cheesy, with Fritos chips to give it a crutch and make it fun.
Did I mention that it comes together quickly too? I like to have all the ingredients in my food storage so I can whip this up whenever I’m running out of time to make dinner.
This dish is sure to be a crowd pleaser in your home to if you give it a shot. I promise your kids and husband will be coming back for seconds.
- 1 lbs ground beef, cooked and drained
- 2 cups shredded cheddar cheese
- 1 7oz red enchilada sauce
- 1 can chili
- 1 cup sour cream
- 1 8oz. can tomato sauce
- 1 bag fritos
- Brown and drain beef. Then add in all 1½ cup cheese, enchilada sauce, chili, sour cream tomato sauce and all but 1 cup of the chips. Mix well. Bake in a casserole dish at 350 for 20-30 minutes. Top with remaining chips and cheese.
