Okie Caviar
Okie Caviar is a crowd favorite appetizer! Made with simple ingredients from your pantry, this dish comes together quickly.
This is one of our family favorite go-tos in the summer. Maybe it’s because almost all the ingredients are pantry staples. I like to keep a supply of canned fruit, vegetables and beans in my pantry because they cut down on meal prep time. Because of the canned beans and tomatoes this dish is so easy to put together. All it takes is a few turns of the can opener and you are almost done.
Ingredients:
- 1 can SW black beans, rinsed
- 1 can SW petite-cut tomatoes
- 1 can black eyed peas
- 1 can Green Giant White shoepeg corn
- 1 can original Rotel tomatoes
- 1/2 bottle Italian dressing
- 1 green pepper finely diced
- 1 red onion finely diced
No matter the time of year, you’ll always be able to these vegetables on the shelves of the grocery store. I live in a small town and am able to find all of the ingredients at my local grocer, Lee’s Marketplace. Since they were picked and canned at the peak of freshness all the flavor and nutrients is sealed in the can.
Look at all those colors! After you’ve added the beans and vegetables to the bowl, mix in a half bottle of the Italian dressing and refrigerate. I think it is best served the next day, after the flavors have had a chance to meld. Just be sure you have a big bag of tortilla chips to go with it!
