Pesto Parmesan Chicken
Sharing a favorite Italian chicken dish today. We love pesto at our house. This baked dish with a side of fettuccini alfredo is pure comfort food and especially delicious on a cold winter night.
Also, this dish requires just a few simple steps and is easy to throw together on a busy night.
Pesto Parmesan Chicken
Pesto Parmesan Chicken
Italian Bread Crumbs
1/2 cup melted butter
Mozzarella Cheese (a slice for each chicken breast)
8 chicken breast thin halves
1 C. Pesto
Grated Parmesan (about 1 cup)
Preheat your oven to 400 degrees. Slice your chicken breasts in half so they are thinner pieces. Cover the breast halves in the melted butter first, and then coat them in the italian bread crumbs. Place the chicken on a greased baking sheet and bake for 15 minutes. Then top each chicken slices with 1 T. pesto, mozzarella cheese slice and then sprinkle parmesan cheese on top. Bake for another 10-15 minutes at 400 degrees. Serve with a side of pasta, or you can make a delicious italian pesto sandwich.
